squashquinoaI first heard of quinoa many years ago from a friend who was diagnosed with wheat sensitivity. Quinoa, which is the seed of a flowering plant, is related to spinach and beets. It is not a grain, but is treated like one in recipes. It is suitable for those who suffer from celiac disease and maintain a gluten-free diet. The pseudocereal, as it is officially termed, originates from the Andean region of South America. It was considered sacred in Incan society, second in importance to the potato, and followed by corn. The Spanish conquistadors disliked quinoa, suppressed its production, and it never gained popularity outside of South America.

What makes quinoa so special is that it is a complete protein with a full set of amino acids, the building blocks of proteins. This especially made it nutritionally significant to pre-Colombian peoples. It continues to be important to vegetarians and vegans. Quinoa can be used in many ways and is available in different forms, including flour, flakes, and the whole seed. The flakes can be eaten like oatmeal or, when combined with flour, baked into cookies, quick breads, pancakes, and waffles. Whole quinoa comes in a few colors, but only two are available in the States, white and red, of which the red has more fiber. Whole quinoa can be cooked and eaten like rice and made into pilafs or stir-frys.

s-pumpkin-fondue-largeWe can't think of many things we like better than fondue. We're also pretty fond of cooking things inside other edible things. The confluence of these two circumstances makes Gourmet's Roast Pumpkin with Cheese "Fondue" one of our favorite cold-weather recipes.

This pumpkin fondue recipe, proof that simplicity does not negate decadence, is probably not something you should eat every day -- even if you want to, like us. You'll understand why as you begin to fill the cavity of your pumpkin with toasted baguette slices, cream, stock and more cheese than you'd initially thought necessary.

After you've filled the pumpkin and rubbed the skin with olive oil, it goes into the oven where the pumpkin itself does all the work. You'll hear an occasional crackle in there, the air will start to smell delicious. Beware of smoking ovens from overflowing cream -- this happens nearly every time we make this no matter how much headspace we try to leave inside the pumpkin.

sausage-soup.jpgThis soup, along with a green salad and some nice bread, is a great dinner for a chilly night.  This soup is loaded with sausage, beans and ditalini pasta.  It's really a pretty traditional "Pasta e Fagioli" soup, but with sausage. I've made the soup with turkey sausage, but you can use any sausage you like.  

I've used dried beans to make the soup.  You can certainly use canned, but if you've never cooked with dried beans, you should try it.  Some people are confused about dried beans and don't know how to soak them and cook them.  But there really is no mystery to it at all – it's very easy.  Soaking simply softens the beans so that they have a shorter cooking time. That's all.

And you don't really even have to soak them.  If you forget to soak them, simply cook them longer. I just throw the beans in a pot and cover them with water and let them soak all day. I drain them, add fresh water and then cook them until they are tender. That's it.

I lather the thin chicken cutlets with olive oil, sundried tomatoes and garlic, and then season with cracked salt and pepper. These thin cuts of meat roast quickly at 400 degrees and make the house smell as if you’ve been cooking for days.

ImageNow that we're headin into Fall, it's now time for full-fledged autumn salads.You know, the kind with thick slabs of roasted squash, wedges of spicy persimmons, and robust dressings made with maple syrup and heady herbs such as rosemary and sage.

While most fall salads include apples, pears, and fresh figs, not many include of one autumn's most popular fruits: grapes. Perhaps that's because like bananas, grapes are available in our supermarkets year-round and don't seem to have a specific season. Well, they do. Most grapes in the US are grown in California and are harvested between August and December. They're also available at San Diego farmers' markets right now.

I wish I could have you taste some of our local grapes. They're like nothing you've ever tasted from the supermarket. That's because no matter the variety – Champagne, Thompson, Concord, Flame – the grapes aren't picked until fully vine-ripened, which makes them dizzyingly plump, juicy, and flavorful. When you bite into some varieties, they release bursts of juice so intense, you'd think you're drinking wine.
