watermelongrilled.jpgI figure I’ve eaten about 20 pounds of watermelon this summer. Fortunately, it’s 92% water and 0% fat, so my clothes still fit fine.

Even as a kid, I ate a lot of watermelon. Everyone in my family did. I can remember my Dad, his face beet-red from the heat, coming through our back door beaming as he was carrying a colossal watermelon. He always did the same thing: set it down on the kitchen counter and proudly announced its weight – 19 and 1/2 pounds! 23 pounds! Like his lobsta, the bigger it was, the better he liked it.

My brother Chris was always the one to cut the watermelon (seeing as none of the rest of us had his patience). With skills of a surgeon, he extracted every last seed while keeping the melon’s flesh intact. Come to think of it, I don't remember ever seeing seedless watermelons when I was a kid. Did they exist back then?

tompolentaAt noon on any summer day, there's a certain silence that sweeps across our pastures. It's a livestock siesta and no better time to enjoy the peacefulness of the sun and swaying pines around us. Dane and I think of a savory snack to bring to the breeziest spot on the farm - under the shade of our oldest oak tree.

This season we've collected cherry tomatoes by the buckets - sauces, sun dried and salsa has been happening a lot in my kitchen, but there's nothing like the smell of roasting a tray of fresh picked tomatoes.

This simple pie has a cheesy polenta base that feeds my love for the taste of southern grits. I top it with bright, tart roasted tomatoes - although a variety of garden vegetables could be roasted or sauteed for a satisfying topping.

fresh-corn-and-cherry-salad-with-balsamic-vinaigretteI wish there were more savory recipes that feature the cherry. It's sweetness and texture provide the perfect contrast for so many flavors. I love making a pan sauce with cherries and pouring it over pork tenderloin, it's delicious that way. 



But this weekend I was inspired to use cherries in a salad. I happened to serve this Fresh Corn and Cherry Salad alongside my favorite preparation of rib eye steak. Everyone loved it.

Not to mention it was just so beautiful and colorful on the table. 

This recipe serves 8-10 people easily, so it is perfect for a large gathering of friends or family. You'll want to toss it right before serving as the arugula is a delicate green.

rhubarbcompoteIt's rhubarb season. Or is it?

When I was a kid, rhubarb season was usually a couple of months long. You didn't have to buy it at the market because half of your neighbors grew it in their yards. I remember going to my great aunt's house where those crimson stalks stood at attention along the side of her house. I'd rip one right of the ground and bite into it like it was a carrot. I'd do it till my eyes watered, my lips went numb, and my belly turned sour. Ah, those were good days.

Nowadays, I have to rush to get my rhubarb fix. And rhubarb should not be rushed.

Since my belly isn't as steely as it used to be, I forego raw rhubarb for stewed, sweetened dishes like crumbles, crisps, and compotes. I have made many rhubarb compotes, but this one is special. The rhubarb is tempered by sugar and enhanced by freshly squeezed orange juice, aromatic ginger, and sweet blueberries.

barleysaladBarley is a wonderfully versatile grain with a rich nutty flavor and a nice chewy, pasta-like consistency. According to the Whole Grains Council, “barley is highest in fiber of all the whole grains, with common varieties clocking in at about 17% fiber.”

It’s a great addition to hearty soups, but it’s also nice in summer salads and makes a perfect alternative to pasta.

This recipe is easy to throw together early in the day and stored in the refrigerator, giving the ingredients and chance to blend and become more flavorful. You can add other favorite summer ingredients like cucumbers, zucchini, or cherry tomatoes.
